The ServSafe Manager test is the ServSafe Food Protection Manager Certification Exam from the National Restaurant Association: 90 multiple-choice questions in 2 hours, of which 80 are scored and 10 are pilot questions. ServSafe's current FAQ gives the passing score as 70%, which is 56 of the 80 scored questions. It is taken online with a remote proctor for $99, or in person with a Registered ServSafe Instructor or Proctor; it cannot be self-administered.

Who takes it, and who decides that

The exam leads to ServSafe's food protection manager certification, and it is taken by the people responsible for food safety in a food service operation. ServSafe itself states no prerequisite on the pages we read: you do not need a class, a job title or a number of hours to take it.

Whether you must hold the certification is a different question, and ServSafe does not answer it. State and local regulators decide who has to be certified and whether training hours are required as well. Check the rule where you work before you choose between the exam on its own and a class with the exam at the end.

Format

90 multiple-choice questions in 2 hours, about 80 seconds each. 80 are scored. The other 10 are pilot questions ServSafe is trying out; they do not count and are not identified, so answer every question as if it does. The sample questions in ServSafe's examinee handbook have four choices, A to D.

Two ways to take it

Online, with remote proctoring by ProctorU. You take the exam on your own computer while a proctor watches, and the online proctoring rules prohibit calculators and other aids.

In person, on a computer or on paper, with a Registered ServSafe Instructor or Proctor. A class that ends with the exam uses this route.

Either way a proctor is required. The exam cannot be self-administered.

What it costs

The online exam is $99 with the remote proctoring included, though ServSafe's instructions list a surcharge for appointments booked at short notice. For the in-person route the exam access code is $38.99, but that covers the exam only: the proctor or the class may charge separately, and ServSafe does not set that charge.

So the two prices are not directly comparable. The lower figure is the full cost only if a proctor is available to you at no charge.

The passing score: 70%, and why you may see 75%

ServSafe's current FAQ and its Online Proctoring FAQs both give the passing score as 70% or higher: at least 56 of the 80 scored questions correct. The 10 pilot questions are left out of the count.

You will also find 75% quoted, and not only on other websites. An examinee handbook with a 2020 copyright date that is still available from servsafe.com says 75 percent, and the web address of the current FAQ still contains the words 'passing score is 75 or higher' although the text on that page says 70%.

We go by the current FAQ text. The difference is 4 questions, 56 against 60. If your result could fall in that gap, or your regulator asks, confirm the standard with ServSafe directly.

Retakes

You may take the exam twice within 30 days. After a second unsuccessful attempt you must wait 60 days from your most recent attempt before trying again, and no more than four attempts are allowed in any 12-month period.

Each retest needs a new exam purchase and has to be proctored like the first.

How long the certificate lasts

ServSafe's product pages show the certificate as valid for five years. That is ServSafe's period. Its examinee handbook tells candidates to check local regulations for recertification requirements, because the regulator where you work can require something different.

What the nine content areas tell you

ServSafe publishes the number of scored questions in each area, and they are far from equal. Preparing Foods has 16 of the 80. Managing Establishment Facilities has 12, Implementing Active Managerial Control 10 and Managing Personnel 9. Addressing Allergen Issues and Serving Foods have 8 each, Cleaning and Sanitizing 7, and Purchasing, Receiving, and Storing Practices and Responding to Crises 5 each.

Two things stand out. Allergens are a content area in their own right with as many questions as serving. And the building, its plumbing, equipment and pest control, carries 12 questions, more than cleaning and sanitizing.

ServSafe publishes the nine names and their counts but not the tasks beneath them, and its document gives no date for when exam forms moved to the 2026 analysis. Many other websites still describe older content areas, so check that any material you use is organized around these nine.
